The set of up-to-date equipment used at the plant of JSC Monomakh has been added to the coffee machine (which, by the way, one of the most powerful units operated in Ukraine). Another useful addition is a destoner, a machine which takes away all kinds of impurities: dust, sand, stones, and etc. After roasting, the beans are blown through with intense air blast,

and the particles differing from the beans by their weight are filtered out.

The roaster itself has an additional unique air recuperation option. The air passes through the combustion chamber so it is clean when it goes back to the atmosphere. The recuperation process also helps to reduce the natural gas consumption so the energy obtained through combustion can be re-used.

The coffee machine capacity is 500 tons of coffee per month. At JSC Monomakh plant, a traditional method is used to roast coffee beans. It takes longer than at other similar enterprises. Industrial coffee roasting is 12 minutes long, while traditional is 18 to 22 minutes long. Though the extended length of the roasting process reduces productivity, the coffee is roasted more evenly and acquires a softer and more pleasant taste.
